Let the good times roll

Today has been a WAY better day!

I got back on track with food and exercise yesterday and feel REALLY good!

I have come to realize my weak spots and one of them happens to be a lack of organization when it comes to food. This being said, I have decided to make things easier by having similar meals everyday.

For breakfast I will have a slow carb scramble (sausage,mushrooms, tomato, zucchini and onion) topped with poached eggs.

Lunch is definitely picture worthy! Check out these Roast Beef Roll-ups that I’ll have with a dollop of homemade curry mayo and a side of steamed spinach. They are filled with carrot, cucumber, green onion, cabbage and red pepper. I might add that they were delicious and super easy.

Dinner will change a bit from time to time to keep things interesting but tonight, it’s zucchini spaghetti and meatballs with marinara.

  1. Good for you!! I know it doesn’t sound exciting but eating the same types of things is the best thing to do to keep life simple and preparation faster!!
